Both my children love muffins and cupcakes. To make them eat healthy breakfasts and snacks, packed with fiber, vitamins, fruit and vegetables, I bake these muffins that everybody loves (including myself). Here is my recipe. It has a our Latino twist: sweet shredded coconut. I love it! Check the video to see tstep by step, how to make these healthy muffins.

Apple cinnamon muffins
Makes 16 medium muffins__
__Ingredients
__1 cup of unbleached flour
1 cup of whole wheat flour
1/2 cup of boran sugar
2 teaspoons of baking soda
1 tablespoon of ground cinnamon
1/2 teaspoon of salt
1/2 cup of raisins
1/2 cup of chopped walnuts
1/2 cup of shredded coconut1/2 cup of shredded carrot
2 cups of chopped apples
2 eggs
1/2 cup of vegetable oil
1/4 cup of milk
2 teaspoons of vanilla extract
__Preparation
__1. Preheat the oven to 350°F and line a muffin/cupcake pan with paper liners.
2. In a big bowl combine flours, sugar, baking soda, cinnamon and salt.
3. Add raisins, walnuts, coconut, carrot and apples and mix weel.
4. In another bowl, mix eggs, milk, oil and vanilla and add this mixture to the flour mixture.
5. Stir all the ingredients until moistened.
6. Fill the muffin cups 3/4 full.
7. Bake for 20-25 minutes until a toothpick inserted in center of the muffin comes out clean.
8. Cool on wire rack.
