These delicious paletas have a secret ingredient you’ll never guess!

Don't you absolutely love paletas in the summer? For me, they are tied with memories of summer, deliciously dripping treats enjoyed with a Spanglish soundtrack of familia in the background. They come from ice cream trucks, corner store freezers, bell-ringing paleteros, or made at home by hands you know and love.

Long live paletas!

Today, I was sent this wonderful recipe for berry paletas, but with a secret ingredient to make them a little better for you. Ready? I'm so excited to share it with you.

The secret ingredient is tofu! Now, I'm not gonna lie, usually I'm pretty wary of tofu. What can I say, I'm a typical genetically modified-opposed Californian? These paletas I'm totally okay with because they use non-GMO verified tofu. So you get worry-free paletas with silky creaminess and an added boost of protein. Nice!

Tofu and Berry Paletas

INGREDIENTS

1/2 package (7 oz.) House Foods Tofu Soft
2 cups strawberries or other berries, hulled and sliced
1/2 cup super fine sugar
1 1/2 teaspoons pure vanilla extract

DIRECTIONS

Add the berries to a bowl and toss with the sugar and the vanilla. Let sit out for 20 minutes so they become juicy.

Add fruit mixture to a blender or food processor and puree until smooth. Add the tofu and blend again until incorporated.

Divide the mixture into 4 popsicle molds. Freeze until firm, for about 4 hours.

Makes 6 popsicles (3 ounces each).
