My two sons love cookies. They love homemade cookies and, better yet, they love to make them. I think the pride and sense of achievement make the cookies to taste better. We recently cancelled a short vacation in the Florida Keys because of bad weather and decided to stay at home. Among the many things we did were these delicious cookies. We added chopped macadamia nuts which made them real standouts! So, today I'm sharing the resulting recipe. Hope you and your kids like them!

Chocolate chip cookies with macadamia nuts and chocolate
Makes 36 cookies
__Ingredients
__1 cup chopped macadamia nuts
1 1/4 cups all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1 1/3 cup brown sugar
2 eggs
1 teaspoon vanilla extract
12 oz chopped milk chocolate
Preparation:
1. Spread the nuts on a baking sheet and take it to the oven, stirring occasionally until toasted and fragrant, about 6-8 minutes. Reserve and turn off the oven.
2. In a bowl, sift the flour, baking soda and salt.
3. In another bowl, using an electric mixer on medium-high speed, beat butter and sugar until fluffy, about 3 minutes.
4. Add eggs and vanilla and continue beating.
5. Reduce the speed to low and gradually add the flour mixture, beating until smooth.
6. With a spoon, add the chocolate chips and chopped nuts, distributing them evenly throughout the dough. Cover and refrigerate at least 2 hours.
7. Preheat oven to 350° F. Cover baking sheets with parchment paper or silicone baking.
8. Arrange tablespoons of chilled dough on the baking sheets leaving about an inch between them.
9. Put baking sheets in the oven and bake for 4 minutes. Rotate them and bake for 4-5 minutes, until cookies are lightly browned.
10. Remove from oven and let cool completely.
