My youngest child is a very picky eater. He's 9 years old and the only fruits he likes are bananas, apples, and grapes. I always wonder if he ever gets bored. Looking for a way to incorporate more fruit to his diet, I started making these pancakes on Sundays, which is the day we usually eat pancakes at home.

I first made them with bananas, then with banana and pecans, and then I incorporated the blueberries. Now, these pancakes are my son favorites and I score 3 points (1 for the bananas, 1 for the blueberries and another 1 for the pecans) every time he eats them, bingo! Here is my recipe. Ingredients
3 Tbs. of butter melted
2 cups of buttermilk
2 eggs
1 Tbs. of sugar
1/2 Tsp. of salt
1 1/2 cups of all purpose flour
1/2 Tsp. of baking soda
1 1/2 Tsp. of baking powder
1 cup blueberries
1 cup bananas
1/2 cup pecans
Have all your ingredients ready...
Chop the pecans.
Slice the bananas...
You can also chop the bananas…
Put everything together...
In a bowl, mix the butter, buttermilk, eggs, flour, sugar, baking soda and baking powder. Then, add the bananas, blueberries and pecans and stir.

In a pan over medium heat, melt some butter. Pour the batter into the hot surface to form the pancakes. Cook until bubbles form and begin to break on the surface, about 1.5 minutes. Turn the pancake and cook it for 20-30 seconds.
Serve...
Serve hot with butter and maple syrup (or honey.)
