My friend Vanessa from De Su Mamá was given a box of Barilla Campanelle pasta, which she turned into a healthy summer pasta salad with homeade spinach and walnut pesto that works well at home or at a picnic and is a perfect example of eating a health Mediterranean diet.

When I saw her photographs of this delicious summer pasta salad packed with leafy greens, fresh red and yellow tomatoes, and hearty campanelle pasta, I asked her if I could share the recipe with all of you and she graciously accepted.
Spinach Walnut Pesto
Ingredients
Spinach, several handfuls (I used about 2 cups)
2/3rd cup Walnuts, toasted on the stovetop
1 lemon, zested and juiced
1/2 cup Parm cheese, shredded
2-3 cloves Garlic, use to your taste preference
salt/pepper, to taste
EVOO (extra virgin olive oil)
