Since I discovered how tasty and amaizng grilled food is, I will find any excuse to grill fish, meat poultry, vegetables, and even fruits in my house. Today's recipe is grilled salmon with a crust made of island spices and thyme. A fish rich in omega-3, salmon is good to lower cholesterol and triglycerides. And as a bonus, this recipe is diet friendly!

This recipe is not only extremely easy, but it's incredibly delicious and flavorful. All you have to do is prepare the spice and thyme jerk marinade and cook fish on the grill (charcoal is usually better, but gas will do too!). The secret to this juicy filet is to let the jerk permeate to the fish by cooking it slowly–not directly over the fire–in a covered grill. This time I served the salmon with grilled asparagus and grilled pineapple. Hope you like my recipe!
Grilled salmon with island jerk spice
Serves 4 to 6
Ingredients:
4 salmon fillets with the skin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1/2 teaspoon dried thyme leaves
1/4 teaspoon paprika
1/2 teaspoon brown sugar
Salt to taste
Preparation:
Heat up the grill.
In a mortar, add all the spices, rosemary, sugar, and salt; muddle.
Spread the marinade over the top of the fish filets and press a little with your fingers.
Place the filets on the grill, skin side down. Let them cook on low heat for 12 to 15 minutes, with the grill covered so the fish will smoke.
