Time and time again, I hear that you should eat seasonally. Meaning that you should eat what is in season. Why? Why should we be eating seasonally? Well, there are many reasons, but here are a few:
- Seasonal fruits and vegetables taste better because they are freshly harvested.
- Seasonal produce is at its best price.
- Seasonal (local) produce is better for the environment because it is not being shipped from thousands of miles away.
Sometimes it is hard to tell what is in season because if you go to the supermarket they may have produce that was flown in from who knows where that is not actually in season where you live. I usually look it up online. What did I do before the internet? I'll tell you what is in season right now: mangos or mangoes, if you prefer.

Avocado and mango salad

Ingredients for the salad:
- 3 corn ears (discard the husks and corn silk)
- 2T extra virgin olive oil
- 3 cubed avocados
- The juice of 1 lime
- 2 cubed mangos
- 1 chopped red bell pepper
- 3T chopped fresh cilantro
- 6 cups mixed greens or baby spinach or both

Ingredients for pie filling:
- 6 mangoes (slightly unripened), peeled and sliced
- 1 lime, juice only
- 1 1/4 cup granulated sugar
- 1/2 to 2/3 cup cornstarch* (I used unflavored Maizena)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 2 tablespoons cold butter, cut up in small pieces

- 1/3 cup of mayonnaise
- 2 tbsp of chopped cilantro
- 1 tbsp of lime juice
- 8 bread slices to make 4 sandwiches of the bread type you like (we used paninis this time)
- 1 cup of baby spinach
- 1 Avocado in slices
- 1 Mango in slices
- Salt and pepper

Mango stuffed french toast

Ingredients:
- 4 tablespoons butter
- 4 large mangoes, peeled and thinly sliced
- 1/2 cup granulated sugar

- 1 can evaporated milk
- 1 cup regular milk
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon pure vanilla extract
- Powdered sugar
