I love a warm bowl of farina for breakfast. So much so that I always have tons of farina on hand. It's so affordable and it keeps forever. It occurred to me one day that if you can make oatmeal cookies, you must be able to make farina cookies. I went on a hunt and found a recipe that I modified.
I made the recipe my own by adding ground flax seed and rolling the cookies in powdered sugar while they were still warm. Why flax? Because flax is good for you–it's high in fiber and contains omega-3 fatty acids. Why powdered sugar? Why not? They are cookies, after all.

This recipe is simple, easy, and adaptable. Feel free to modify it by adding something like cinnamon or nutmeg to it, if you like. I think nuts would work really well in these cookies, too.
Comfort Farina Cookies
Ingredients
- 3/4 C butter
- 3/4 C dark brown sugar
- 1 egg
- 1 t vanilla
- 1.5 C flour
- 1 t baking powder
- 1/4 t salt
- 1/2 C farina
- 2 T ground flax
- powdered sugar to dip the cookies in once they are baked
Directions
Cream together butter, sugar, vanilla, and egg.
Add the rest.
Roll them into little balls.
Bake at 350°F for 15 minutes.
Dip in powdered sugar while still warm.
Enjoy the cookies on their own or as an accompaniment to a glass of milk or a cup of hot coffee.
