Well, today is National Pancake Day and some of us are celebrating by getting free pancakes at delicious pancake chain IHOP (International House of Pancakes), which is offering a free stack of buttermilk pancakes from 7 a.m. to 10 p.m.
Of course, if you can't get yourself to an IHOP today, then we have an even BETTER option for you. Our MamásLatinas managing editor, Mariela Rosario, has a hubby who makes the world's BEST pancakes (it's been confirmed). They're so delicious because they contain three ingredients that I know we all love: chocolate, coconut and banana! I mean, who wouldn't go gaga for these chocolate-coco banana pancakes?! Chocolate-Coco Banana Pancakes
Ingredients:
1 1/2 cups pancake mix
1/2 cup coconut milk (you can substitute dairy milk, which will make them fluffier)
1 egg
1/2 tsp vanilla extract
1 tablespoon coconut oil
1 overripe banana, mushed
6 ounces semisweet or dark chocolate chips (you can add more if desired)
Coconut flakes for garnish
Coconut oil, for cooking (you can substitute olive oil or butter)
Directions:
1. Combine the pancake mix, milk, egg, coconut oil and vanilla extract. Beat until the mixture becomes creamy. Finally, fold in the mushed banana and chocolate chips. Mix together with a wooden spoon, adding more as desired.
2. Once your pancake mixture is ready, take a pan the size of the pancakes you want and place it over a medium heat. Using about 1 teaspoon of coconut oil, melt the oil and then use a ladle to distribute your first pancake. Cook it on one side until it has cooked through and is golden-brown, then flip it over and let it get golden-brown again.
3. Repeat this until your entire pancake mixture is gone. Finally, serve with coconut flake garnish and some extra chocolate chips if your feeling really sinful. Be sure to have some maple syrup or, even better, homemade dulce de leche on the side!
