The reason that I love my slow cooker so SO much is because it helps to make meals easier for me. The truth of the matter is, I just often don't have time to make a nice meal after work. I'm tired and all I actually want to do, especially at the end of a long week, is lay in front of my TV while eating dinner. But that doesn't mean that I want to be eating processed junk, gross take-out food or feeding my family any of those things!
Well, that's where my slow cooker comes in handy. I've recently fallen in love with making tacos because it's as easy as putting the meat to cook while you're at work and then piling it on with your favorite toppings. The beauty of it is that everyone in the family can just choose whatever they want. This time I'm sharing a slow cooker beef carnitas tacos recipe because it gives you a nice dose of red meat (for iron!) but this version is pretty healthy, too.

Slow Cooker Beef Carnitas Tacos
Ingredients:
2 lbs flank steak
1 yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 jalapeño, seeded and chopped
2 tsp chili powder
1 tsp cumin
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
Corn tortillas
Avocado slices
Cilantro
Your favorite salsa
Limes
