Turkey with no gravy is like a Thanksgiving dinner with no turkey. Because my Thanksgiving Turkey is seasoned with garlic and herb butter, the gravy is herb based too.
Since the turkey is roasted in a bag with onions, celery, and carrots, once the bird is done, there should be plenty of liquid to make this delicate herb infuse gravy. And best of all, because the of the turkey's seasonings, the liquids are flavorful enough that there should be no need to add any salt or other sazón to the gravy mixture.
Ingredients for 4 cups
4 Tbs. of butter
4 Tbs. of flour
4 cups of the reserved juices from the turkey roaster
2 sprigs of rosemary
2 springs of thyme
1 sprig of sage
- In a saucepan over medium heat, melt the butter until sizzling hot.
- Stir in the flour.
- Cook, stirring constantly, for about 2 minutes.
- Add the herbs and lowly stir in the turkey juices.
- Cook, stirring constantly, until the mixture boils and thickens, 3-4 minutes.
- Discard the herbs.
- Serve warm in a saucer.
