5 Garbanzo salad recipes that will help you lose weight!

I'm a big fan of garbanzo beans (also known as chickpeas) because they're a fantastic source of protein. After falling in love with the weight loss-friendly kale recipes I wrote about earlier, I've been on the lookout for other diet-friendly recipes lately. That's how I went from loving garbanzos to actually using them to help me lose weight. 

I'm definitely betting that with these 5 garbanzo salad recipes you can help yourself lose weight, too. The reason I love these meals is because they're healthy, full of protein to keep you full longer, and, of course, so delicious that you'd never guess you were actually eating something that was good for you. Mustard Greens, Garbanzos & Pearl Onion Salad

Ingredients:
4 garlic cloves, smashed
6 pearl onions, quartered
1 bunch mustard greens, chopped
1/4 cup lemon juice
4 shiitake mushrooms, chopped
1/2 can garbanzos, drained
1/4 cup dry roasted peanuts
2 tbsp olive oil
sea salt, to taste

Directions:
In a pot, saute your pearl onions and garlic in a little bit of olive oil for 5 minutes. Add in the mustard greens and lemon juice, stir until the leaves have reduced. Throw in your shiitake mushrooms and chickpeas, cook for another 5 minutes. Finally, toss in your peanuts and mix well. Give it a minute or two, then serve!

Chorizo, Tomato, & Garbanzos Salad

__Ingredients:
__1 Tbsp olive oil
8 oz fully cooked chorizo sausages, cut into 3/4-inch chunks
2 shallots, halved, thinly sliced
1 can (15.5 oz.) garbanzos, drained, rinsed
16 oz. red and yellow cherry tomatoes, halved
2 Tbsp sherry vinegar
1/2 cup coarsely chopped flat-leaf parsley
1/4 tsp freshly ground black pepper
Pinch of kosher salt

Avocado Garbanzos Salad

__Ingredients:
__1-2 teaspoons lemon juice
1 teaspoon red wine vinegar
1 teaspoon oil from sun-dried tomatoes
3.5 ounces feta, cubed
1/2 cup sun-dried tomatoes, chopped
1 can garbanzos
1 avocado, cubed
a few handfuls spring mix/salad greens

Quinoa, Black Bean & Garbanzos Salad

__1/2 cup Olive Oil 
1/4 cup Apple Cider Vinegar 
1 tablespoon Dijon Mustard 
1 teaspoon cumin 
1 teaspoon minced garlic 
1 cup dry quinoa, cooked in 2 cups water 
19 ounces can of Black Beans, rinsed 
19 ounces can of garbanzos, rinsed 
3/4 cups chopped red pepper 
3/4 cups chopped yellow pepper 
3/4 cups chopped green onion

Garbanzo Salad with Mexican Mango Dressing

Vanilla and Spice

Ingredients:
1 can (19 oz.) garbanzos, drained and rinsed
1 red pepper
3 carrots
1/2 a kohlrabi (or jicama)
1 avocado, diced
1/2 cup chopped cilantro
handful of toasted pumpkin seeds (optional)
1 ripe mango, peeled and diced
1/4 cup fresh lime juice
2 tbsp olive oil
1/4 tsp sea salt
pinch of cayenne + pinch of chili flakes (or 1/4 tsp of any chili spice you like)
