Latin slow cooker: Easiest ever Brazil-style collard greens (EXCLUSIVE RECIPE)

My mami has been really into growing vegetables in her garden this year and I couldn't be more excited to receive them as gifts. Last time she came to visit, she gave me a big bunch of collard greens.

Trying to figure out what I wanted to make with them, I remembered a friend of mine saying that garlicky collard greens were the side dish of choice to go alongside the classic Brazilian dish feijoada, the meats and black bean stew. Being in love with my slow cooker, though, I immediately got the idea to make this dish in it because I wanted to save time and simultaneously make the dish in the easiest way possible. My recipe came out SO WELL that I know I'll be doing this one many more times in the future. Enjoy!

Slow Cooker Brazil-style Collard Greens (a.k.a. Garlicky Collard Greens or Brazilian Couve a Mineira)

Prep Time: 5 minutes
Slow Cook: 2 hours on High
Yield: About 4 cups cooked

Ingredients:
1 tablespoon olive oil
2 pounds collard greens
2 tablespoons red wine vinegar
6 teaspoons minced garlic
salt and pepper, to taste

Directions:
Coat the bottom and sides of your slow cooker in olive oil. Take your collard green leaves about 10 at a time, roll them up, fold them in half and then slice them into thin strips. Drizzle your red wine vinegar on top, then sprinkle with the minced garlic. Add some salt and pepper, to taste, then set your slow cooker for 2 hours on High. Once done, mix with a large spoon and serve alongside your favorite dish for a heaping dose of delicious veggies.
