Well, leave it to my countrymen (and women) to honor author Ernest Hemingway in a big, BIG way. And by big I mean that they made one gigantic daiquiri, which was his favorite drink when vacationing on the island, in order to earn a spot in the Guiness Book of World Records. With a 71-gallon daiquiri, I certainly hope they made it!
In the meantime, though, I decided I'd like to make my own daiquiri to celebrate their success. It's one of my favorite summer drinks and the only difficultly is choosing from one of these delicious recipes, which includes the Hemingway daiquiri, a sugar-free strawberry daiquiri (if you want to be a bit healthier), a frozen mango and mint daiquiri, a spiked watermelon daiquiri and an avocado daiquiri. Hemingway Daiquiri

Ingredients: Ice, 2 ounces white rum, 3/4 ounce fresh lime juice, 1/2 ounce fresh grapefruit juice, 1/2 ounce maraschino liqueur, 1 lime wheel for garnish (optional)
Directions: Fill a cocktail shaker with ice. Add all of the remaining ingredients except the lime wheel and shake well. Strain into a chilled coupe and garnish with the lime wheel.

Sugar-Free Strawberry Daiquiri

Ingredients: 1/2 cup sliced strawberries (see note for measuring), 1 tablespoon lime juice, 1 jigger rum (1.5 oz.), sweetener to taste (depends on how sweet the strawberries are), small handful of ice (not needed if berries are frozen)
Directions: Put in blender and push the button.
Measuring note: In order to do a nutritional analysis, I decided to go with the sliced berries since there is less variability compared to when measuring whole berries. This is about 3/4 cup medium-sized whole berries. It is also 80 grams of berries.

Frozen Mango and Mint Spiced Daiquiri

Ingredients: ice (crushed), 1 oz. fresh lime juice, 2 tsp. sugar syrup, 2 oz. spiced rum (lik Captain Morgan), 12 mangos (ripe, peeled and roughly chopped), 6 mint leaves, 1 slice mango (for garnish), 1 sprig mint (for garnish)
Directions: Put some crushed ice in a food processor or blender. Add the lime juice, sugar syrup, rum, mango, and mint leaves and blend until smooth. Pour into a large Champagne saucer (I used a sangria glass) and decorate with a mango slice and a mint sprig.

Spiked Watermelon Daiquiri with Citrus-Ginger Infusion

Ingredients: 3 1/2 cups fresh pineapple (cored and coarsely chopped), 16 cups Spiked Watermelon (recipe here), 5 cups Citrus-Ginger Infusion (recipe here), 30 cups ice, citrus-flavored vodka (as desired), fresh mint sprigs and straws, for garnish
Directions: Place the pineapple in a plastic container in the freezer until completely frozen, at least 3 hours. In a blender, combine 1 1/2 cups spiked watermelon, 6 tablespoons frozen pineapple, and 1/2 cup Citrus-Ginger Infusion. (Amount of infusion may be increased or decreased according to individual taste.) Blend on high speed until well-combined. Add enough ice to fill the blender, 3 cups, and additional vodka, as desired, and blend until smooth. Pour into tall chilled glasses or a pitcher. Repeat with the remaining ingredients, to make about 10 blenderfuls. Garnish with mint sprigs and serve with a long straw.

Avocado Daiquiri

Ingredients: 2 oz. light rum, 2 oz. gold rum, 1/2 oz. fresh lemon juice, 1/2 oz. fresh lime juice, 2 oz. simple syrup, 1/4 medium-ripe avocado (peeled and pitted), 1/2 oz. half-and-half, 1 1/2 cups ice
Directions: Combine ingredients in blender and blend on high until just smooth, about 20 seconds. Divide mixture between two cocktail glasses and serve.
