Slow cooker collecting dust? Try these 3 juicy chicken recipes

After making some delicious slow cooker carnitas tacos a few weeks ago, I've laid low from my usual slow cooker adventures. I love making food in it and often find it the easiest way to make meals for the rest of the week, like soups and stews. But it's not often that I find a great Latin slow cooker recipes. Determined to get back to it, though, I decided that I wanted to try something with chicken this time. I found a great slow cooker chicken ropa vieja to satisfy my Cuban cravings, a slow cooker salsa chicken that's low in calories and (of course) a slow cooker chipotle chicken recipe from my favorite Latin chef, Aáron Sanchez. I'll definitely be enjoying these this weekend.

Chicken Ropa Vieja (recipe courtesy of Skinny Taste)

Ingredients:
3 (22.5 oz) chicken breast halves
1 small onion, quartered
1 tomato, quartered
1 carrot, peeled and chopped
2 cloves garlic, peeled
1 tbsp olive oil
1 small onion, thinly sliced
1 small green bell pepper, seeded and thinly sliced
1 small red bell pepper, seeded and thinly sliced
1/4 cup dry white wine
1/2 cup tomato sauce
reserved broth
1 tsp cumin, or more to taste (I like a lot)
garlic powder
salt and pepper to taste

Directions:
Place chicken, onion, tomato, carrot, and 2 cloves of garlic into crock pot. Add water to cover, and set to high for 4 hours until the chicken is tender. If cooking on the stove, cook on medium-low, and simmer until the chicken is tender, 30 to 40 minutes. Place the chicken into a bowl and shred it into strips using a fork; set aside. Reserve the liquid.

In a large deep skillet, heat olive oil over medium heat. Add the garlic, onions, green peppers, and red peppers. Cook about 3 to 4 minutes. Stir in chicken, tomato sauce, white wine, and about 3/4 cup of the reserved broth to create a nice sauce. Season with cumin, garlic powder salt, and pepper. Cover and simmer on low for about 10 minutes more adding more broth and seasoning if needed. Makes 4 cups.

Slow Cooker Salsa Chicken (recipe courtesy of Spark People)

Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream

Directions:
Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Pour salsa and soup over chicken. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve with rice.

NOTES:
You may use half the packet of taco seasoning (I have started doing this to reduce sodium content myself). Some slow cookers cook faster than others. Mine is a true slow cooker (have had it over 10 years.) The newer ones cook a bit faster and you may have to adjust your cooking time based on that!
