You can make crispy tostadas—in the microwave! (RECIPE)

Tostadas for dinner can be one of the easiest weeknight meal to make.__ All you need to make it delicious is top a crispy tortilla with your favorite foods, like black beans and avocado or some shredded pernil and a little cheese.

Although I love these, the one thing I don't love is that tostadas are typically made by frying (which adds a lot of grease and calories). So what to do if you're looking for a really quick meal? It turns out there's a healthy and super easy way to make tostadas: just throw them in the microwave!

In the weekly New York Times feature "Recipes for Health", writer Martha Rose Shulman explains how she discovered that the perfect way to make crispy tostadas is in the microwave (with a toasty snap, as opposed to making them in the oven where there will be no snap):

"This method requires a little patience: Zap a tortilla for a minute and it will be soggy, even wet, on the bottom. Flip it over and zap it again, and all the moisture will be gone. Sometimes it takes a few turns, as every microwave is different; you'll have to figure out the timing with yours. In my microwave I zap for one minute, turn the tortillas over, zap for another, then sometimes need to zap for 30 seconds to a minute longer to get a browned chip with snap. You have to watch closely, though, as they'll burn quickly once dry."

Doesn't that sound amazingly easy? I have to say, I'm a bit obsessed. I'm already planning how many days a week I want to make these and what I want to top them with. Should I go with some pork carnitas perhaps or maybe make some sort of vegetarian version? Either way, now that I know how easy, healthy and crispy my tostadas will turn out in just a couple of minutes, you can bet I'll be making these soon. Won't you?
