Celebrate Pi Day with this delicious pie recipe!

It's Pi day!!! What? You're not super excited? Well, I am! National Pi Day honors the mathematical constant 3.14 (Get it? Because it's March 14th or 3/14!) and there's no better way to celebrate than with a pie recipe.

Though I didn't grow up eating pie (I don't know many Latinos who have) I've come to appreciate a lot of different kind of pies: pumpkin pie for Thanksgiving, key lime pie in the summer and apple pie around Fourth of July. But one thing that I did grow up eating as a dessert is pastelitos de guayaba y queso.

These cream-cheese-and-guava filled pastries were everywhere. In fact, sometimes we even ate the filling on its own as a snack.

Bringing together my newfound love for pie and my old love for guayaba y queso, I found these fried cream cheese and guava hand pies that are absolutely to-die-for delicious.

Fried Cream Cheese and Guava Hand Pies (recipe courtesy of The Hungry Housewife)

Ingredients:
1 Tube refrigerated Flakey Biscuits, 8 count
8 ounce(s) of Philadelphia Cream Cheese, Softened
1/4 cup(s) of Sugar
1 Small Jar Guava Preserves
1 Egg White, beaten
Peanut Oil for frying
Powdered Sugar for Garnish

Directions:
In a medium pot, heat about 4 inches of peanut or canola oil to 350. In a small bowl, mix cream cheese and sugar together until smooth. Flour your work surface. Roll each biscuit into a 8 inch circle. Place 2 table spoons of the cream cheese mixture onto the middle of the biscuit circle. Place 1 1/2 tablespoons of the guava preserves in the biscuit circle. Brush some egg white onto the outer edge of the biscuit. Fold the biscuit over. Seal it with or fork or firmly pinch the edges together. Fry in batches of 2 for about 45 seconds to 1 minute or until golden brown. Drain them on paper towels. Sprinkle with powdered sugar. Enjoy!
