If I've learned something since becoming a mom is that when you make your children part of the preparation of food it's much, much easier for them to eat it. Things as simple as cutting a sprig of basil or tasting the difference between a sprig of spearmint and parsley, will not only stimulate their senses but open up their curiosity and appetite for those flavors.

Neither of my two kids like raw tomatoes but they love pasta, meatballs and pizza with tomato sauce. Since they both love basil, among other things because I'm a pesto lover, I found a way for them to eat "sin chistar" this pasta with sliced tomatoes and plenty of fresh basil. They are responsible for picking, rinsing and drying the leaves and they love it! Nothing like making a child feel like a chef and then get them to enjoy their own "creations."
I hope you like my recipe. All it takes is tomatoes, garlic and basil and it tastes like summer!
Whole-weat pasta with tomato and fresh basil
Makes 4 servings
Ingredients
12 ripe tomatoes, peeled, seeded and sliced
10 cloves of garlic, finely sliced
1/4 cup of olive oil
2 cups fresh basil leaves
Salt
1 package of whole-wheat pasta
Parmesan cheese
Preparation
In boiling water, cook the pasta al dente, strain and rinse with cold water to stop cooking. Strain again.
Put the oil in a skillet and sauté the garlic over medium heat until it gets lightly golden, 2-3 minutes.
Add the tomatoes and cook for 1-2 minutes. Add the basil and salt to taste.
Stir in the pasta.
Serve in pasta dishes with Parmesan cheese.

Have all your ingredients ready.
Sauté the garlic
Put the oil in a skillet and sauté the garlic over medium heat until it gets lightly golden, 2-3 minutes.
Sauté the tomatoes
Add the tomatoes and cook for 2-3 minutes to infuse them with the garlic.
Add the pasta
Add the pasta. I used whole-wheat to make it more nutritious for the kids.
Add the basil
Turn off the heat and add the basil and stir.
And enjoy it!
Serve hot, warm or cold with Parmesan cheese.
