Just because it's played on the beach doesn't mean that beach volleyball isn't a tough workout! Elizabeth Hernandez and her teenage daughter, Paulette, love the sport, and love playing together. Elizabeth played when she was young, but hurt her ankle and had to give it up. But she never forgot how much she loved the game and wanted to share that same joy with her daughter. Elizabeth handed Paulette a ball when she was really little and the rest is history. She's been playing, with her mother as her trainer, ever since.
Elizabeth and Paulette share their passion for the sport, but more importantly, they are able to spend lots and lots of time together. The whole family gets together to play and they get to go to different beaches to get their practices in.
Paulette loves bananas and knows that they are a great post-workout food. They are high in potassium and help prevent muscle cramps, and the Hernandez family loves fruit of all kinds.
So, we came up with Tropical Banana-Oatmeal Cookies, a fun recipe, filled with nutritious, energizing ingredients like bananas, peanut butter, low-fat yogurt, Kellogg's Frosted Flakes, dried fruits and nuts. These cookies are easy to make and even easier to pack up and take along to reward everyone for a game well played.
