
There is corn on the cob and then there is elote. I like corn on the cob, but I like elote more better! If you have not had the pleasure of having street-style elote, then we need to put an end to this deficiency in your life. If you have sampled elote from a street vendor, well, then you know how yummy it is and why not have some more?
As a kid, whenever we would go to Mexico, I'd keep an eye out for elote vendors and point excitedly when I would see one. Ah, the flavor! More and more I'm starting to see vendors with this style of corn at events in the U.S., but not enough for my taste. No worries, the super great news is that you don't even have to leave your home to get it. You can make it yourself with this great Latin-style street vendor corn recipe. Make sure to make enough for everyone though because it will be in high demand.

Ingredients
6 ears corn-on-the-cob 1/4 cup mayonnaise
3 Tbsp. sour cream
3 Tbsp. chopped fresh cilantro
2 Tbsp. FRANK'S® REDHOT® Original Cayenne Pepper Sauce
Juice from 1 lime
1 clove garlic
1/4 tsp. chili powder
1/2 cup finely grated Cotija cheese (or Parmesan)
Directions
Grill, steam or boil corn until tender.
Meanwhile, combine remaining ingredients except cheese in small bowl.
Arrange hot corn on serving platter; cool 3 minutes. Drizzle with Mayonnaise mixture; turn to coat. Sprinkle with cheese.
