Watermelon
Watermelon is a water-based fruit and when you freeze it, it doesn't make for the best component. Think of it this way, when it defrosts you're left with soggy fruit!
Potatoes
The spud believe it or not also has high water content which doesn't make it ideal to freeze. Your best bet is to avoid freezing them altogether and if you do choose to do so, make sure they're cooked beforehand.
Lettuce
Lettuce is another green that is mostly waterbased therefore freezing it only makes it gross and soggy if you choose to thaw it. I don't think anyone wants a wet salad!
Milk & cheese
Althought it might sound silly that these dairy products shouldn't be frozen, it's best to avoid doing so. In the case of dairy, curds get separated from the whey and don't freeze as well as you would think.
Salad greens
Greens such as spinach and other raw greens will only end up wilting and lose their flavor. That's not exactly what you want when you're use to cucumber and other veggies being crunchy!
