
*Summer__ is my favorite because it's so easy to pretty much grill ANYTHING. And what better way to spend time with family and friends at home than making great food in the backyard on your grill? I can't think of anything better.
Lately I've discovered that literally everything can be cooked on the grill. Here are my pork back ribs recipe seasoned with my own spicy rub, grilled over indirect fire. The trick is that when they are almost done, cover them with BBQ sauce and cook to make the sauce adhere to the meat. I hope you like them.

Pork baby back ribs grilled with BBQ sauce
Serves 4 portions
Ingredients:
2 racks of pork baby back ribs (2 to 3 pounds)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon brown sugar
Salt
1 cup BBQ sauce
Preparation:
Preheat the grill.
In a mortar mix all ingredients for the rub: the 3 peppers, cinnamon, ginger, salt and sugar.
Season the ribs with the rub.
Place the ribs bone side down on the grill, Cook them off the grill, covered for 15-20 minutes, until the meat thermometer reaches 150°F (ie the ribs are almost done).
With a brush, spread the top of the ribs with BBQ sauce and cook covered for 3-5 minutes.
Serve hot.
