Valladolid is inspired by traditional flavors and admits that she kept this recipe almost exactly the same as her mom's. "This recipe reminds me a lot of my mom, and that's a beautiful thing," The Kitchen co-host explained.

It really doesn't get more authentic than this. "This recipe is probably in every Mexican household and that's what's so amazing about it. I feel like I'm traveling back to Mexico whenever I make it," explained Chef Marcela.

Ingredients:

  • 7 cups water
  • 1 cup white rice
  • 1 cinnamon stick
  • 1 1/2 cup of granulated sugar
  • 2 teaspoons orange zest
  • 1 tablespoon vanilla extract
  • 3 cups whole milk (like Lactaid)
  • Ground cinnamon for dusting

Preparation:

Put the water, rice, and cinnamon stick in a medium size heavy saucepan and set over medium-high heat. Bring to a boil, uncovered, and cook until rice is tender, for about 18 minutes. Strain out the liquid. Return the rice to the saucepan. Stir in whole milk, sugar and orange zest.

Continue cooking rice over medium-high heat until rice comes to a boil. Reduce the heat to low and cook, stirring constantly. Cook for about 20 minutes, mixture will become thick. Remove from heat and add vanilla extract and stir. Transfer rice pudding to a serving bowl. Dust with ground cinnamon and serve.
