
This recipe is as easy to prepare as it is healthy. It's a pasta (in this case orzo) salad, with red onions, tomatoes, black beans, lots of cilantro, and a touch of jalapeño–basically, all ingredients you have in your kitchen right now. You have to try it!

Black bean & pasta salad
Makes 4-6 servings
Ingredients for the salad:
1 cup of cooked orzo, following the instructions on the package and cooled
1 cup cooked black beans (if they're canned, wash and strain before using)
1 cup chopped tomato
1/2 cup finely chopped red onion
1 cup fresh cilantro
1 jalapeño finely chopped
Ingredients for the vinaigrette
1/2 cup olive oil
1/4 cup red wine vinegar
Salt to taste
To make:
1. Place all salad ingredients in a large bowl and mix well.
2. In a small bowl, mix all the vinaigrette ingredients and whisk well until they all come together.
3. Bring the salad and vinaigrette together and incorporate.
4. Cover with plastic wrap and let marinate for about 30 minutes before serving.
