I've got a ridiculously easy one-pot recipe today for you that is sure to be a hit: It's a taco casserole. I make no secret about the fact that I am a nut for tacos–what's there not to love about them, right? But sadly, tacos are not a one dish kind of meal. They take more of an assembly line kind of set up, which is fine because they are fun to make and the results are so worth it. When I'm in a rush to feed my family, which includes very young children, well, I don't have the patience to do the whole taco assembly line thing, so getting taco flavor from one pot that we can all enjoy is all kinds of awesome as far as I'm concerned.
