
This year, I've really been focused on gathering and making one-pot recipes and I have to say I've mastered one-pot rice combos. You know the whole chicken and rice or shrimp and rice thing. I love them, but on occasion I want to step away from rice for a minute or two because variety is good. So this week I really wanted to find a one pot meal that has the flavor and satisfaction of what I've gotten so good at making, but without the rice and I found this fantastic sausage and quinoa recipe that fits the bill wonderfully. I did not grow up eating quinoa, but when I discovered it as an adult I was hooked. I find that it is just as versatile as rice and really easy to prepare.

Sausage and Quinoa One-Pot Supper
Ingredients
1 package (12 ounces) Wellshire Smoked Polska or Turkey Kielbasa, cut into (1/2 inch) cubes
1 yellow onion, chopped
2 tablespoons chopped sage
1 cup apple or pear hard cider
1 cup quinoa, rinsed and drained
1/2 cup dried cranberries
1 teaspoon fine sea salt
2 cups chopped kale or spinach leaves, lightly packed
