Spicy chicken with poblano chiles & cheese is low in calories, heavy on flavor

Something needs to change with me because I don't what is going on, but lately I am feeling all kinds of bleh. It's not good and it has me searching for ways to feel better. Naturally, I'm looking to my food choices to help. I need to eat food that makes me feel full, fueled and fabulous, but it can't be too hard to make because I'm sorry, I don't have the time or energy for that most days of the week. I am all about the one-pot meals because they make dinner time a breeze, so I went looking for something that is healthy and full of flavor and I found it in this fantastic spicy chicken with poblano peppers and cheese recipe.

This Mexican-style casserole is low-cal, full of ingredients that are good for you and just what I need to help me go from bleh to better than ever.

Spicy Chicken with Poblano Chiles and Cheese

Ingredients

4 poblano chiles, halved and seeded
2 cups chopped cooked chicken breast
1 cup (4 ounces) reduced-fat shredded cheddar cheese
1 cup fresh corn kernels (about 2 ears)
1/2 cup chopped onion
1/2 cup chopped zucchini
1/2 cup chopped red bell pepper
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon bottled minced garlic
1/4 cup bottled salsa
Cooking spray
3/4 cup crushed baked tortilla chips, divided
