It's winter, I'm cold, I'm tired, I'm hungry. Boy, I sound like such a complainer, don't I? The thing is that lately when it comes to cooking, I feel so uninspired. I feel like I'm tired of all my standbys, but of course I still have to eat and I prefer a home cooked meal. So what's a tired, cold, hungry gal with no cooking inspiration to do? She reaches out to her online friends and asks for recipes of Latin one-pot meals because the tired part of her really likes the idea of making an entire meal in just one pot, baby!
Fortunately, for me and you, I have some very inspired and talented friends who can cook! This week my buddy Silvia Martinez from Mamá Latina Tips hooked me up with the most amazing spicy Mexican shrimp soup or caldo de camarón (as my mom would call it) recipe. Just look at it! I'm so excited to try this recipe out partly because I've never cooked with dried shrimp before and I'm always game to try something new.
Spicy Mexican Shrimp Soup / Caldo de Camarón
Ingredients
7 oz dried shrimp
5 – 6 guajillo chiles
2 zucchini
2 carrots
2 small chayotes (a type of squash, find these in Mexican style markets)
2 tomatoes
2 cloves of garlic olive oil (not extra-virgin)
