It's the first day of summer which also means it is marked by the Summer Solstice–when the sun is at its highest peak and makes today the longest day of the year. But besides those extra minutes we are given, we are also reminded that it's summer and we're barely in shape for the season. According to the Pagans, the way to celebrate the Summer Solstice is to eat foods that relate to the sun, such as lots of fresh and bright fruits and vegetables. And summer is the PERFECT time to find all of this produce, so you have no excuses not to try it out.

Pour on the honey: Traditionally this time of the year was intended to gather honey from beehives. It also makes up a big portion of the food used to celebrate the summer solstice. Naturally sweeten up a fruit parfait or a light dessert using raw honey. But be mindful of how much you add because honey still has sugar!
Pile on these veggies: summer is abundant with all types of veggies, but there are some that just remind us of the season. Take for instance squash, zucchini, tomatoes, red, yellow, and orange peppers, cucumbers, and carrots. Add them to salads or to your grill for an instant nutrition boost and dose of antioxidants.
Eat a rainbow of fruits: Unlike the winter, there are many fruits to eat during the summer. Don't miss out on fruits such as papaya, mangos, apricots, pineapples, strawberries, or cherries. Eat them on their own as a snack or make a colorful and healthy fruit salad combined with all of them.
Use fresh herbs: Paying tribute to the sun includes eating brightly colored vegetation, but it also means seasoning foods with fresh herbs. There are many herbs that are tied to the sun such as lemongrass, cinnamon, cloves, rosemary, chamomile, and bay leaves. You can even use some of these to make fresh iced tea or lemonade.
Avoid meat: Although this may seem to be a difficult task to do, the summer solstice is all about celebrating and eating plant-based foods. There are a number of ways to have in-season fruits, vegetables, even seeds and nuts that you won't miss meat. Plus, you won't have to cook, so imagine what you can do with all that extra time!
