Latin slow cooker: Hearty beef guisado with veggies

Regardless of the time of year, sometimes I just crave a good hearty protein-rich meal. I mean even in the summer, I can't subsist on salad alone. The weather may be hot, but on occasion I'll still want a good roast, even though I don't want to heat up the oven because that will heat up my home. Thank goodness for the trusted slow cooker that can make a roast without making my home feel hot enough to roast me.

This delicious Slow Cooker beef guisado (or pot roast) is packed with protein and veggies. I love that it's made with sweet potatoes, pineapple, and coconut milk. It's a great meal during the winter, but don't forget about it in the summer. After all, you don't forget about ice cream in the winter, do you?

2 pounds beef chuck roast
2 carrots, peeled and chopped
2 jalapeños, chopped
2 medium peppers, chopped 

1 medium onion, diced
4 medium radishes, tops removed and cut in half
1 to 2 sweet potatoes, chunked
1 can (8 ounces) pineapple chunks
1 can (14.5 ounces) stewed tomatoes
2 cups frozen corn
1 can (14 ounces) coconut milk
1/4 cup canola oil
1 tablespoon garlic powder
1 tablespoon ground cumin
