The combination of coconut and chocolate is phenomenal and works in so many forms. I do believe candy fortunes have been made on it. Coconut and chocolate combined with oatmeal to make a cookie you don't even have to bake is almost too much yumminess to take. Almost.

No-Bake Chocolate Coconut Cookies
Prep time: 30 minutes__Makes:__ about 2 dozen cookies
Ingredients:
3 cups quick cooking oats
1 cup sweetened flaked coconut
1 3/4 packed brown sugar
1/2 cup unsweetened cocoa powder
1/2 cup low-fat milk
1/2 cup butter
Directions:
- Line a baking sheet with parchment paper.
- Stir oats and coconut together in a bowl until thoroughly combined.
- In a saucepan over medium heat stir together milk, butter, sugar and cocoa powder until smooth. Bring to a boil for 2 minutes while constantly stirring. Pour mixture over oats and coconut to coat. Drop by tablespoon onto lined baking sheet, let cool to allow for hardening. Eat them up yum, yum!
