Latin slow cooker: Delicious low-calorie pernil (RECIPE)

Pernil is DEFINITELY not one of those Latin dishes that I would put anywhere near the words "healthy" or "weight loss friendly". In fact, considering that most of us Latinos cook it with plenty of good old fashioned pork fat, it's probably one of the worst dishes out there. Of course, that hasn't exactly stopped me from enjoying it plenty of times throughout my life.

However, as we go deeper into the holidays and I start to seriously worry about my expanding waist line, I'm looking for a recipe that might not do as much damage as the classic Puerto Rican pernil might. That's why I was absolutely THRILLED when I found this delicious slow cooker low-calorie pernil recipe. It's everything I was looking for: all of the flavor but none of the fat! Plus, if you pair it with simple black beans, some veggies and brown rice, you're going to be doing your whole family a big healthy favor.

Skinny Slow Cooked Pernil (Puerto Rican Pork)

Ingredients:
3 lb pork shoulder blade roast, lean, all fat removed
4-5 cloves garlic, crushed
1 tbsp coarse salt
1/2 tsp oregano
1/2 tbsp cumin
1/4 tsp crushed black pepper
3 oranges, juice of (1/2 cup)
2 limes, juice of
