Whether you fully celebrate the holiday as a Catholic or, like me, use it as an excuse for delicious food at a family gathering, these recipes are sure to please. From Asian-inspired shrimp balls for a great little appetizer, super easy salmon tacos for a Good Friday lunch or even a delectable bacalao con garbanzos (salted cod with chickpeas) for dinner, these fish recipes for Good Friday are great for the whole family.

Shrimp Balls (recipe courtesy of Cooking Gallery)
Ingredients:
White bread – remove the brown sides and cut into small cubes
500 grams shrimps, chopped finely
2 stalks green onions, chopped
1 egg
1.5 tbs oyster sauce
1 tbs fish sauce
A pinch of white pepper
1/2 tsp baking soda
2 tbs corn flour (or tapioca flour)
Directions:
Mix all ingredients stated, except the white bread cubes. Take one tablespoon of the shrimp mixture and coat it with the bread cubes. Shape the bread coated shrimp mixture into a ball. Repeat. Deep-fry the shrimp balls until golden brown

Simple Salmon Tacos (recipe courtesy of My Colombian Recipes)
Ingredients (for the salmon):
2 pounds salmon
1/2 teaspoon onion powder
1/4 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper
Ingredients (for the tacos):
8 corn tortillas
1/4 cup sour cream
1 1/2 cups shredded cabbage
2 avocados
Juice of 2 limes
1/4 cup chopped fresh cilantro
Favorite salsa to serve
Directions:
1. Preheat the oven to 400°F. In a large baking dish place the salmon fillets. Season with cumin, onion powder, chili powder, garlic powder, salt and pepper.
2. Place the baking dish in the oven and bake for 15 to 20 minutes or until the salmon is cooked through.
3. Heat the tortillas on a nonstick skillet, then wrap them in aluminum foil to keep them warm.
4. To assemble: spread one tortilla with sour cream, then top with cabbage, salmon, avocado and fresh cilantro. Season with salt and pepper to taste and drizzle lime juice on top. Repeat the process with the remaining tortillas or just let every person assemble their own tacos.
