Sometimes I think the only reason I go to bed is so that I can wake up the next morning and have coffee. Yes, I like me some coffee and not just in a cup. I like it in liqueur (think Kahlua), I like it in ice cream, I like it when used to infuse flavor in all sorts of things, which is why it will come as no surprise that I am incredibly intrigued by this recipe for coffee rubbed carnitas with salsa verde. Yes, the thought of this savory meal makes me perk up. Shoot, I bet you even someone who isn't into coffee would go nuts for these tamales. I mean just look at them. I know they're a little involved to make, but, believe me, SO worth it!

Ingredients

Carnitas
1 tbsp. unsweetened cocoa powder
1 tbsp. instant espresso coffee
1 tbsp. kosher salt
1 tsp. paprika
2 tsp. dried oregano
1 tsp. ground black pepper
1 tsp. cumin
1/2 tsp. coriander
1/2 tsp. cayenne pepper
4-5 lb. pork shoulder
2 tbsp. vegetable oil

Tamales
4 Cups Maseca Flour
2 sticks butter
Dried corn husk, soaked in warm water for at least an hour
Salt

Salsa Verde
12 tomatillos, husks removed and quartered
6 cloves of garlic
1 jalapeno, seeds removed
2 poblano peppers, seeds removed
1 medium Vidalia onion
1 bunch cilantro
1 tsp. salt
1 tbsp lime juice
